You can make these with regular cheese or with dairy free cheddar shreds. If you can’t have milk – like I couldn’t while Serafina was itty bitty – Daiya “cheese” shreds are a great substitute, though I think the mozzarella is better than the cheddar.
I had been craving pizza for awhile and when I was grocery shopping, I saw pizza rolls in the freezer case. I would NEVER buy those things – my processed food vice is Bagel Bites – but thought I could make them myself…why not? I was sure I could do the same thing with way yummier ingredients and this is what I came up with.

Makes 8 roll ups (feeds 2-3 adults when accompanied by salad)
1 package of crescent rolls (I like Immaculate Baking Company’s)
2 cups of cooked ground beef
1 cup pizza sauce (check out my freezer pack pizza sauce)
Shredded cheese of choice: I used Pecorino Romano and Daiya Cheddar (aka whatever you have in the fridge)
Black olives (slice if they are whole)
Spices: chopped onion and oregano
Roll out the crescent rolls and separate into wedges.
Spread on pizza sauce.
Sprinkle with meat, cheese, olives, chopped onion, and oregano.
Roll up very carefully, starting with the largest end. You’ll want to leave a little bit of the smallest end bare so that it will close and stick.
Bake @ 350 degrees for 12-15 minutes or until golden brown.
Serve with a salad and you’ve got an easy, delicious, almost-just-like-a-real-pizza meal! If you’re using the non-dairy cheese, you really have no idea that you’re eating anything different (which for me was so refreshing!). Plus, they look cute on your plate.
